Job Description

                                                         Areas of Focus: Refinery Canteen and Guest House Dining Halls

Responsibility  End to end smooth functioning of food service operations - Food Service Operations, Maintenance & CRM

1.Food Service Operations General

            a.       Ensuring daily catering services are in line with SOW& SOR

b.       Ensuring process improvement on service delivery

c.       Timely information to client & KF Management on any deviation -  Service, Product, Process or people

d.       Ensuring the documentation of meetings, instructions, observations, events & incidents

e.       Manage events as per point no -1

f.        Ensure e-meal system is in place and is functional

g.       Daily briefing procedures for Service staff

h.       T&D initiatives for staff

 

2. Menu planning 

a.       Menu cycle planning at 2 locations and sign off from client and implementation by partners.                                                                                     

         Planning to be done based on seasonal availability and type of catering service and inputs from

                            i.      Feedback

                            ii.     Food Committee

                            iii.     Availability & Variety 

 

b.      Seek deviations from the client for changes in the menu with proper justification

c.       Record and store the menus

3. Food Presentation

                               a. Ensure the food prepared is presented with properly with appropriate garnishing at all locations

                  b.The chaffing dishes are not empty at any given point of time during the service hour and food                                                                    

4..Food Quality monitoring& Material Management

 

a.       Ensuring that the planned menu is delivered as per timeline Food  Tasting procedure to         ascertain the quality of the food, sign off/ suggestions           

      i.      Food tasting file to be maintained with client signoff

      b.      Preserving food prepared for at least 6 hours for testing in case of any food poisoning complaint

      c.       Ensure material being used by partner is as per SOR/SOW.

                 i.      Conduct periodic (weekly) spot checks and  record.

                ii.      Escalate impropriety  and stop use of u  authorised material

                iii.      In case of substitution, highlight the quality of  substitute and  take sign off from client

   d.      Ensure food is cooked, stored and served in the most hygienic  manner, using available equipment                            and service resources

  e.      Ensure procurement process is smooth

                i.      Purchase - Quality

               ii.      Receiving only items cleared by standard  purchase 

               iii.      Storage FIFO

               iv.      Issues As per indent

f.        Train people on quality and make the process a culture of the organization

           g.       Define Quality standards and monitor

       i.      Critical control points in food production and food  service

       ii.      Ensure, Personal, Equipment and infrastructure hygiene

       iii.      Pest control

       iv.      ISO Norms

1.       Used oil disposal

2.       Waste management - Garbage Segregation &  disposal

3.       Water treatment & Testing

4.       Periodic lab testing

a.       Food

b.      Kitchen equipment & Knife Swabs

c.       Kitchen personnel hand  swabs                 

   v.      Medical Tests for food handlers

5.  Client Relationship Management

 a.   To ensure for feedback collection process at Canteen, Porta Cabins and guest house dining halls is implemented (As per SLA parameters & Requirement)

i.      Recording feedback and submitting for SLA reviews

b.      Personally meet at least 10 people per day for receiving feedback  personally

c.       Attend food committee meetings take and give inputs

d.      Engage and inform clients of any development

e.      Complaint handling and Service recovery

6.  Maintenance

a. Ensure a PPM calendar is in place and is followed:

i.Kitchen, Service & Vending equipment maintenance Kitchen &   Dining hall cleaning schedules

ii.F&B Service Equipment Cleaning and polishing schedules

1.Cutlery, crockery, Glassware, Linen and others

iii.Maintain emergency contact numbers of all vendors and coordinated for PPM / AMC/ Emergency requirement

           b. Stock maintenance (Equipment - Non Food) and stock taking as per defined frequency

i.Equipment discrepancy report

ii.Breakage Report

 

    7.  MIS & Reports

a.       Daily site reports

b.      Monthly Management Reports

c.       MOM of Meetings held with client & Customers
